Illegal in some countries, Beluga is considered the grandest of caviar. The Beluga is the biggest of the sturgeon and the only one that is exclusively carnivorous. The eggs are large, soft, and smoky-grey in colour. The lightest grey is particularly prized.- Species: Huso Huso
